- Boiled potatoes 500 g
- Bread crumbs 150 g
- Parmesan cheese 60 g
- Flour 50 g
- Eggs 2
- Sage a few leaves
- Thyme A few sprigs
- Savory a few sprigs
- Salt and pepper to taste
- Peanut oil enough for frying

Let’s begin with mashing potatoes while still warm.

At this point, let them cool, then add flour, half of the breadcrumbs, thyme, savory and sage leaves finely minced, one egg, salt, pepper and Parmesan cheese until mixture is smooth.

Next, grab handfuls of potato dough with moist hands, give each a cylinder-like shape, roll them into the beaten egg first and then the bread crumbs, making sure they adhere well to the croquettes.

Now, it’s time to turn on the stove and set on it a roomy pan containing abundant peanut oil.

Time to fry at about 180° until completely golden. Drain on paper towels and serve hot!
